This is one great soup. Creamy curried cauliflower soup is easy, nutritious, low in fat, a smoky golden color, and above all delicious. I will often serve it on soup and sandwich night during the week, but it dresses up quite nicely for dinner parties and holiday meals with the added drizzle of herb oil.
